Guinness Chicken Tacos

  • Author: by Mary
  • Prep Time: 5 mins
  • Cook Time: 25 mins
  • Total Time: 30 minutes
  • Yield: 2-3 1x

Ingredients

Units Scale
  • 2 chicken breasts
  • salt & pepper
  • 1 bottle of Guinness beer
  • 2 Tbsp honey
  • 2 plum tomatoes, diced
  • 1/4 cup diced white onion
  • 1/4 cup chopped fresh cilantro
  • 1 tsp lime juice
  • 1 1/2 cups cooked black beans
  • 1/2 tsp cumin
  • 3 cups shredded/chopped green cabbage
  • 1 avocado, sliced
  • 6 small tortillas

Instructions

  1. Season both chicken breasts with salt and pepper on both sides. Heat a skillet over medium-high heat and add the chicken. Cook on one side until browning (2 minutes), then flip and brown the other side.
  2. When both sides are brown, reduce heat to medium and add the Guinness and honey to the pan. Stir together, bring to a simmer, and let cook while you prepare the rest of the ingredients. (Stir every couple of minutes, and flip the chicken after about 6 minutes).
  3. Combine the diced tomatoes, white onion, cilantro, lime juice, and another dash of salt. Mix together and set aside.
  4. Season the beans with salt and the cumin, to taste. If you want, lightly mash the beans so they aren't all whole. Set aside.
  5. Make sure the remaining vegetables are chopped, and the tortillas are heated to your liking.
  6. When the Guinness has reduced to leave only 1 tsp in the pan, use two forks to gently shred the chicken. If you need to add a few teaspoons of water, go ahead. Stir, and cook until all of the liquid is absorbed or evaporated.
  7. Assemble the tacos in this order: tortilla, cabbage, chicken, beans, salsa, avocado, extra cilantro/lime if wanted. Enjoy!
