Sesame Chicken Soba Noodle Stir Fry

Ingredients

  • 1/4 cup toasted sesame oil
  • 1/4 cup tamari (or soy sauce if not GF)
  • 3 large garlic cloves
  • 2 Tbsp fresh ginger
  • 1 Tbsp fresh lime juice
  • 1/2 tsp rice wine vinegar
  • 1 tsp honey
  • 1 small hot chili (optional)
  • 2 chicken breasts, sliced to bite-sized chunks
  • 10 oz. uncooked soba noodles
  • 1 head broccoli, cut to florets
  • 1 red bell pepper, cut into long strips
  • 1/3 cup sesame seeds (toasted or raw)
  • 1/2 cup diced green onions
  • cilantro

Instructions

  1. Combine the toasted sesame oil, tamari, garlic, ginger, lime juice, rice wine vinegar, honey, and chili in the blender. Blend until smooth. Divide in half.
  2. Combine the chicken and half of the sauce and let marinade for 30 minutes.
  3. While the chicken is marinating, cook the soba according to directions (I use these) but remove two minutes before they're fully cooked. Rinse in cold water and set aside.
  4. In a large wok over medium heat, add the chicken and cook, stirring, until no pink is showing. Add the vegetables and cook for 6-8 minutes, or until they're softening.
  5. Add the remaining marinade, and noodles, and cook for another three minutes (or until the noodles and chicken are fully cooked).
  6. Remove, garnish with ample sesame seeds, green onions, and cilantro.
