- 4 cups fresh corn kernels
- 2 cups cherry tomatoes, halved
- 3 cups cooked quinoa, cooled
- 1/4 cup chopped cilantro
- 1/3 cup minced green onions
- 2 tsp fresh lime juice
- 1 Tbsp olive oil
- salt & pepper
Instructions
- Toss all prepared ingredients together, adding salt and pepper to taste.
- Serve cold or at room temperature.
