- 2 chicken breasts
- salt & pepper
- 1 bottle of Guinness beer
- 2 Tbsp honey
- 2 plum tomatoes, diced
- 1/4 cup diced white onion
- 1/4 cup chopped fresh cilantro
- 1 tsp lime juice
- 1 1/2 cups cooked black beans
- 1/2 tsp cumin
- 3 cups shredded/chopped green cabbage
- 1 avocado, sliced
- 6 small tortillas
Instructions
- Season both chicken breasts with salt and pepper on both sides. Heat a skillet over medium-high heat and add the chicken. Cook on one side until browning (2 minutes), then flip and brown the other side.
- When both sides are brown, reduce heat to medium and add the Guinness and honey to the pan. Stir together, bring to a simmer, and let cook while you prepare the rest of the ingredients. (Stir every couple of minutes, and flip the chicken after about 6 minutes).
- Combine the diced tomatoes, white onion, cilantro, lime juice, and another dash of salt. Mix together and set aside.
- Season the beans with salt and the cumin, to taste. If you want, lightly mash the beans so they aren't all whole. Set aside.
- Make sure the remaining vegetables are chopped, and the tortillas are heated to your liking.
- When the Guinness has reduced to leave only 1 tsp in the pan, use two forks to gently shred the chicken. If you need to add a few teaspoons of water, go ahead. Stir, and cook until all of the liquid is absorbed or evaporated.
- Assemble the tacos in this order: tortilla, cabbage, chicken, beans, salsa, avocado, extra cilantro/lime if wanted. Enjoy!
