Light and Fluffy Baked Apple Pancake

Ingredients

  • 2 Tbsp unsalted butter
  • 2 Golden Delicious apples, halved, peeled, cored, and sliced 1/2 inch thick
  • 3 Tbsp sugar
  • 1 Tbsp fresh lemon juice
  • 1/4 cup pure maple syrup, plus more for serving
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • pinch of salt
  • 4 large eggs, separated
  • 1 cup milk

Instructions

  1. Preheat the oven to 375 F.
  2. In a large, oven-safe skillet melt the butter. Add the apples, 1 Tablespoon of the sugar, and the lemon juice. Cook over medium-high heat until the apples are golden, about 6 minutes.
  3. Add the 1/4 cup of maple syrup and simmer until thickened, about one minute.
  4. Spread the apples in a single layer in the bottom of the pan, and remove from the heat.
  5. In a separate bowl, combine the flour, baking powder, and salt. Set aside.
  6. Combine the egg yolks and milk, beating until combined. Pour into the dry ingredients and mix to combine.
  7. In a separate bowl, beat the egg whites until stiff peaks form. Carefully fold into the other batter mixture, then spread evenly over the apples.
  8. Bake in the upper third of the oven for 20 minutes, or until golden. Let cool for 5 minutes before running a knife around the edge and inverting onto a serving plate.
  9. Serve with warmed maple syrup.
