Scale
- 1/4 cup toasted sesame oil
- 1/4 cup tamari (or soy sauce if not GF)
- 3 large garlic cloves
- 2 Tbsp fresh ginger
- 1 Tbsp fresh lime juice
- 1/2 tsp rice wine vinegar
- 1 tsp honey
- 1 small hot chili (optional)
- 2 chicken breasts, sliced to bite-sized chunks
- 10 oz. uncooked soba noodles
- 1 head broccoli, cut to florets
- 1 red bell pepper, cut into long strips
- 1/3 cup sesame seeds (toasted or raw)
- 1/2 cup diced green onions
- cilantro
Instructions
- Combine the toasted sesame oil, tamari, garlic, ginger, lime juice, rice wine vinegar, honey, and chili in the blender. Blend until smooth. Divide in half.
- Combine the chicken and half of the sauce and let marinade for 30 minutes.
- While the chicken is marinating, cook the soba according to directions (I use these) but remove two minutes before they're fully cooked. Rinse in cold water and set aside.
- In a large wok over medium heat, add the chicken and cook, stirring, until no pink is showing. Add the vegetables and cook for 6-8 minutes, or until they're softening.
- Add the remaining marinade, and noodles, and cook for another three minutes (or until the noodles and chicken are fully cooked).
- Remove, garnish with ample sesame seeds, green onions, and cilantro.
