- 2 cups mixed greens
- 1/4 cup shredded carrots
- 1/8 cup chopped toasted pecans
- 1 Tbsp crumbled chevre
- 1/2 cup halved cherry tomatoes
- 1/8 cup dried sour cherries
- juice of 1/2 a lemon
- 1 egg, cooked however you’d like (preferably with a runny yolk)
- 1/2 apple, sliced
- Toss together the greens, carrots, pecans, chevre, tomatoes, and cherries.
- Squeeze the lemon juice on top, then add the cooked egg and let the yolk run wild as you mix.
- Serve with sliced apple.
