- 1 piece of bread, for toasting
- butter
- 1 large handful of chard, torn into little pieces (stem chopped finely, too)
- 1 green onion, diced {white and green parts}
- 1 scant tsp maple syrup
- 1/4 tsp smoked paprika
- 1/8 tsp salt
- 1 egg
- pepper
- parmesan cheese, grated
- cherry tomatoes, halved
Instructions
- Toast the bread, and slather it with butter when it's ready.
- Meanwhile, in a skillet over medium heat, cook the chard in a small amount of butter or oil. Once it has wilted substantially, after 3-4 minutes, add the green onion, maple syrup, smoked paprika, and salt. Stir while cooking for another two minutes, or until the chard is as soft as you'd like. Remove from heat.
- Cook the egg to your liking (I went over-easy).
- Arrange the chard on the toast, top with the egg, and garnish with pepper, grated parmesan, and sliced tomatoes.
