Fried Egg on Toast with Smoked Paprika and Maple Chard

  • 1 piece of bread, for toasting
  • butter
  • 1 large handful of chard, torn into little pieces (stem chopped finely, too)
  • 1 green onion, diced {white and green parts}
  • 1 scant tsp maple syrup
  • 1/4 tsp smoked paprika
  • 1/8 tsp salt
  • 1 egg
  • pepper
  • parmesan cheese, grated
  • cherry tomatoes, halved


  1. Toast the bread, and slather it with butter when it’s ready.
  2. Meanwhile, in a skillet over medium heat, cook the chard in a small amount of butter or oil. Once it has wilted substantially, after 3-4 minutes, add the green onion, maple syrup, smoked paprika, and salt. Stir while cooking for another two minutes, or until the chard is as soft as you’d like. Remove from heat.
  3. Cook the egg to your liking (I went over-easy).
  4. Arrange the chard on the toast, top with the egg, and garnish with pepper, grated parmesan, and sliced tomatoes.
