Grapefruit Curd Tart with Broiled Grapefruit Slices

Description

Bright and citrus-y, this tart has a light decadence that adds a sweet touch to any summer evening.


Ingredients

  • 1 pre-baked sweet tart shell
  • 1 recipe grapefruit curd
  • 1/4 cup sour cream
  • 1/4 cup whipping cream
  • 1 Tbsp powdered sugar
  • 1 Tbsp grapefruit zest
  • 1 grapefruit, sliced into disks 1/4" thick, peel removed
  • cinnamon and sugar

Instructions

  1. Prepare your crust and allow to cool fully.
  2. Cook the grapefruit curd and pour into prepared crust when it's done. If you aren't going to put the cream layer on immediately, cover the curd tightly with plastic wrap.
  3. Whip the sour cream, whipping cream, powdered sugar, and grapefruit zest together in a small bowl. This is easy enough to do by hand, as it is such a small amount of liquid. Whip until it holds soft peaks. Pour it over the curd layer and smooth the top. Let chill for 1 hour.
  4. Place your sliced grapefruit disks onto a parchment-lined cookie sheet. Sprinkle liberally with cinnamon and sugar. Broil, on high, for 3-5 minutes, or until they start to brown. Keep your eye on them.
  5. Arrange the broiled grapefruit on top of the tart, serve and enjoy!
