Today I bring you: the simplest recipe on this blog. Maybe. I'm really racking my brain right now to try and remember if I have anything easier... maybe oreo cookie butter, or any other cookie butter, since they take like 1.2 ingredients. But those are pretend foods. They taste good even before you "make" something. It's like those recipes that say "ONLY FOUR INGREDIENTS!" and one of them is cake mix. Um... you're cheating. Pet peeve? Yes.
Back on track: STEAK! I have absolutely no qualms about how much I love steak. It's so. damn. delicious. Especially when it's done well {I don't mean cooked WELL, I mean done properly!}, and ESPECIALLY when it has some delicious seasoning like this here dry rub! I'm a sucker for sweet and spicy. You may think "Hey, isn't that really similar to your halibut recipe?" Yes, yes it is. Very similar. Also, I use this on salmon ALL. THE. TIME. Watchu lookin' at? I'm a resourceful woman — make a big bowl of this stuff and use it on ALL THE MEATS!
Really though, this is our go-to for steak. If we do anything more than just salt & pepper, it's this recipe. Remember back in February when we took that epic backcountry trip where I skied 20+ miles with two right boots? Maybe you don't, but my left big toenail sure does. Well, we lugged steaks in to cook that night {best decision ever}, and they had none other than this very rub on them! After the type-two fun day we had getting up to the fire cabin, these steaks had perfectly soaked up all the flavors in the rub and were quite honestly the best tasting steak I'd ever had. I'm sure the exhaustion and frozen and bruised limbs had absolutely nothing to do with it. It was alllll the rub. 🙂
Throw this rub together en masse if you want to have it around and available for any meat! I haven't tried it on chicken, but I'm sure it would be delicious! As with most things, play around and figure out what you like! Less sweet? Add less sugar! Spicier? Add more chili! Do whatever the heck you want, and I'm sure you'll end up with an edible steak. Hopefully even BETTER than edible! Is your mouth watering for steak yet? Mine certainly is. I haven't had a steak since we left the US, and I'm pretty sure finding a good one over here will either cost me an arm and a leg and/or be dubious meat from who-knows-what animal. I think I'll wait the 2.5 (!!!) weeks until we get home!

Ingredients
- 2 Tbsp brown sugar
- ½ tsp salt
- ½ tsp fresh ground black pepper
- 1 Tbsp chili powder
- 1 tsp paprika
- 1 tsp ground chipotle powder
Instructions
- Mix all ingredients together and pat gently into both sides of fresh steaks. Let sit up to twelve hours (refrigerated) before cooking.
