I'm the kind of girl that cannot skip breakfast. Why would I, anyways? It is, undoubtedly, my favorite meal of the day (breakfast dessert excepted). Last weekend we were camping in Red Lodge, MT the night before my race. I knew I had to start running at 8, and that 9.3 miles would be a bit miserable without breakfast in my belly. This was not motivated by performance or nutritional reasons: this was a purely "I love breakfast and will be HANGRY if I have to wait to eat" rationale. So, even though I was awake most of the night and freezing my buns off, I was up at six to enjoy my partial bagel, banana, and peanut butter in time to digest and kick ass in the run. Breakfast of champions right there! Apparently it paid off — despite my lack of training and therefore off-the-couch run, we got third (and almost second, but there were some mechanical difficulties with my teammate's bike)!
Really though, I love my breakfast. More than anything else, I will go for a bagel sandwich over anything else. While I am a total creature of habit, I do switch up my breakfast sandwiches. Sometimes I go for cheddar, egg, and bacon. Sometimes I do cream cheese, egg, and bacon. Sometimes I just do the egg. Or with butter. Or with spinach. You simply cannot go wrong!
This breakfast sandwich is just a hint into my myriad of breakfast delights — a simple bagel, both sides smothered in cream cheese, with some fresh spinach and a fried egg to top it off. Two eggs is even better... but not everyone can handle that much awesomeness for breakfast. I don't judge.

Description
The classic, the original, the best breakfast bagel that ever graced a kitchen with its presence.
Ingredients
- One bagel, sliced and toasted
- 1 egg
- a few leaves of fresh spinach
- 3 Tbsp cream cheese
- salt + pepper
Instructions
- Fry your egg (or two!) to your liking — I go for over medium usually.
- Slather cream cheese onto both pieces of tasted bagel, and arrange your spinach leaves on one side.
- When the egg is done, place it between the pieces of bagel, add salt and pepper.
- Eat! Now THAT is how to start your morning.
