I really wanted to name this "instant guacamole" but ... well, as much as I truly believe this is about the quickest way you could POSSIBLY make guacamole, I can't in good conscience say "instant" if it takes more than 1 (maaaaybe 2) seconds. This takes like 100 seconds. So, instant times 100. TECHNICALITIES ASIDE: THIS RECIPE IS MY SAVIOR.

Here's the deal: I know it doesn't take that long to mix up a normal batch of guac. But, it's annoying to chop stuff (garlic, onions, peppers, etc.) and then probably get a little messy with the mashing. This way, you put the stuff (garlic, onions, peppers, etc.) in the food processor (or blender) first, get it nice and chopped — 10 seconds — then add the avocado halves and blend until chunky/smooth. That's like 30 more seconds! That leaves you 60 seconds, if we're sticking to my 100-second rule here, to do the minimal labor required. Like, chopping the avocado in half. Not too shabby, eh?

Let's address one of your biggest fears head on here: "IS IT GOING TO BE TOO SMOOTH?!" — no. I mean, yeah if you're trigger happy and blend the heck out of it. But, if you pulse and stop before it's completely silky smooth, you can still retain that chunky guac texture you love. Or, maybe you're all about silky smooth guac, in which case: TRIGGER AWAY! See how accommodating I am? Oh man. You're welcome.

When I moved into my place a few weeks ago, avocados were on sale at Whole Foods ... so I totally stocked up. And then lived on chips and guac and genuinely felt no remorse. It's kinda healthy, right? I mean, corn is a veggie (chips). I'm all for healthy fats (avocados). I see no reason why this is not literally the perfect meal. WAIT: It doesn't have cheese. If there were cheese involved, it would literally be the most perfect meal. Is that a thing? Cheesy guac? Did I just discover my next recipe?? I'm not sold.

I'm sharing a recipe on Friday that comes together quickly and BEGS for guacamole, so keep this on file!! I'll give you a hint: It rhymes with "shmicken jahita rolenta polls." Anyone? Anyone? Just wait 'till Friday.

Quick Guacamole

Ingredients

Units Scale
  • ½ white onion
  • ½ jalapeño* (optional, seeds in or out)
  • ½ cup fresh cilantro leaves
  • 3 garlic gloves
  • 1 Tbsp lime juice
  • 3 large avocados
  • ¾ tsp salt
  • ½ tsp fresh ground black pepper

Instructions

  1. In a food processor or blender, combine the onion, jalapeño, cilantro, garlic, and lime juice. Pulse until chopped into pieces the size of your small fingernail.
  2. Add the avocados (peeled and pitted), plus salt and pepper. Pulse until you reach your desired consistency! Add more salt, pepper, and lime juice to taste.

Notes

For less spice, remove jalapeño seeds (or omit jalapeño entirely).
