Thank you all so much for the overwhelming outpouring of love and support after the news in yesterday's post. I woke up yesterday in my new apartment — living alone for the first time ever in my life — to find so many comments and emails and facebook messages and tweets full of encouragement and kindness. While I should have spent the day unpacking the living room full of boxes, I honestly spent many hours in and out of tears of gratitude for the wonderful people I have in my life — even if that means I've never met you, but you come back here and tell me how often you make that darn butter chicken. I guess this really is a community, and I'm so glad to have you all here! Thank you for letting me have this safe container to share the reality of my life — I plan to keep up the realness as best I can from here on out! xoxo {ALSO: If you sent me a note and I haven't written back: I am working on it! I'm pretty sure that over the last year I have entered about ten million giveaways. Mostly on other food blogs, all for really cool stuff: KitchenAid mixers, Le Creuset pots and pans, Cuisinart food processors, etc.
Have I won? NO! What the heck!? With the diligence I put into entering these giveaways, I should be winning hand over foot! If I put that much energy into anything else, surely I'd be successful at it. That's a sad commentary...
Really though: I want some darn boots from Ree. She gives away the coolest boots. Apparently everyone else agrees, as they keep entering and winning instead of me! Ugh. Patience, right? Or ... maybe this is a "play the lottery for 80 years and never win" kind of situation.
So, in case you're as bummed as I am about never winning anything, here is some delicious pudding to cheer you up. Pudding = comfort food at it's finest. I love making it and have no issues finishing it by myself.
This recipe was originally from an old Betty Crocker cookbook, and has been passed down through the last three generations of my family — I remember my mom making it for me as a kid for a quick chocolate fix!

- Prep Time: 2 mins
- Cook Time: 10 mins
- Total Time: 12 minutes
- Yield: 2 1x
Ingredients
- ½ cup sugar
- ¼ cup cocoa
- 2 Tbsp cornstarch
- ⅛ tsp salt
- 1 egg or 2 egg yolks
- 2 cups milk
- 1 Tbsp butter
- 1 ½ tsp vanilla
Instructions
- Combine the sugar, cocoa, cornstarch, salt, and egg (or yolks) together in a saucepan. Mix to combine.
- Over low heat, slowly add the milk while whisking.
- Continue to whisk over low heat until mixture comes to a boil.
- Boil for 1-2 minutes.
- Remove from heat and add butter and vanilla, continue whisking until butter is fully melted and mixed in.
- Pour into small ramekins and chill. If you wish to prevent a skin from forming, press a layer of plastic wrap directly onto the surface of the pudding.
