Since I already admitted I watch SOME television religiously, I suppose I can admit that I actually watch a few shows religiously. Some are respectable. By some I guess I mean one: Downton Abbey. Some are definitely not. Some are in the middle, like Nashville. (LOVE NASHVILLE). I probably should end this post right now.
I'm totally hooked on The Bachelor this season, and kiiinda embarrassed to admit it. It started because my group of girlfriends here in town (those that took me on the awesome Yellowstone day!) watch it and bet on who will get kicked off. It starts as a mockery/game for us... but I can assure you that by this point (THREE girls left!) I'm entirely hooked and will watch whether or not the group gets together — although we only missed one night, during the week there were TWO nights of The Bachelor. We're a dedicated group. And really, where do you see that much drama in your real life? I could point you in the right (wrong) direction, but hopefully you successfully avoid it!
Silly reality shows aside, getting together with the girls each week means DINNER! We rotate houses for viewing, and usually the person hosting cooks a delicious meal. It's actually awesome, because we all love eating (and cheese) enough that everyone always makes really delicious food! It's rare that someone cooks me dinner, so I'm psyched about it!
This dip hasn't actually made an appearance at girls night, but it is definitely the type of thing that would. SPICY, a bit exotic, and super easy to dig in and eat a lot of. Not to mention really easy to make! I may or may not have made this, then sat at my computer "working" and chomping down on half of this bowl. What can I say? I've been craving bean dip lately! And potstickers, and steak...

Ingredients
- 2 14 oz cans of black beans, rinsed and drained
- ½ cup chopped cilantro
- 1 jalapeño (remove seeds for less spice, or leave them in!)
- 2 cloves garlic
- 3 green onions, chopped
- ¼ medium onion
- 1 tsp smoked paprika
- ½ tsp chili powder
- 1 tsp ground cumin
- 1 tsp salt (more to taste)
- 2 Tbsp fresh lemon juice
- ½ cup grated cheddar cheese (optional, will help tame the spice a bit)
Instructions
- Combine all ingredients in a food processor, and blend until smooth! Serve with chips or crackers.

Yum! This looks so simple and tasty. Last year, a friend got me hooked on the Bachelor. This year, I got my roommate hooked after only one episode. We watch it together religiously (but usually just snack on popcorn).

I started watching Nashville, but then missed a few episodes because of events, and now I feel like I've fallen way too far behind to catch up. I hate it because I really love Connie Britton and enjoyed the few episodes I saw. Maybe I'll catch up in the summer when there is nothing to watch!

Definitely do! It's worth it. You can watch the last 5 episodes on ABC.com... so just don't fall too far behind! They didn't have a new episode this week and I'm dying to know what will happen next! Ugh. I'm semi-pathetic.

I made this and it's very good, but a simple change will make it dramatically better. Roast the peppers (stemmed), onions (peeled and cut into quarters), and garlic (peeled) first, tossed in a little oil in a 350 degree oven for 15 minutes. This will mitigate the raw heat of the chiles and add a little sweetness and smoky flavor.
